G-D rained down mannah from heaven in order to nourish the Jewish people on their desert journey from Egypt to the land of Israel. The mannah was precious - their sole form on sustenance straight from G-D.
In order to protect it, it was enveloped in two layers of dew, one above and one underneath. As a symbolic reminder of the carefully wrapped mannah, we too cover our shabbat challah.
In the middle of the embroidery there is the word "shabbat" in modern script with a decorative border that is just waiting for your needle and threads!
